  • For the best performance, choose well-seasoned hardwoods with a moisture content of 20 percent or less. Ideal options include hornbeam, ash, maple, birch, elm, and beech. Avoid resinous softwoods such as pine, spruce, or fir, as well as reclaimed lumber, which may contain varnish or chemicals. Kiln-dried wood can be useful for kindling but should not be the primary fuel source.

  • No. Maine Ovens are certified as wood-fired appliances only. Any modification to introduce gas assistance would void their UL/Omni listing, which is essential for compliance with local safety codes.

Investing in a Maine Oven

  • Each wood-fired oven arrives handcrafted and fully assembled. Included with the oven are essential cooking accessories, including a pizza peel, perforated peel, ash rake, hearth brush, handheld infrared thermometer, and an insulated oven door. For outdoor installations that do not require an insulated chimney, a stainless steel chimney is also provided. Additional upgrades such as metal stands, copper chimneys, and tool holders are available to enhance your cooking experience.

  • Our ovens include a two-year extended warranty on the Le Panyol oven core and a ten-year limited warranty on the oven dome.

Caring for Your Oven

  • Our ovens are naturally self-cleaning. The extreme heat burns away residue, leaving no lingering flavors or bacteria. Simply rake out the ash and brush the hearth floor as needed. For stubborn spots, sweep glowing embers over the surface and let nature do the rest.

  • Absolutely! Our ovens are built to withstand the elements; featuring an integrated dome for full weather resistance—simply insert the door when not in use to keep the interior dry. If winterizing your oven, remove the chimney and cap it until you're ready to fire up again.
