If you're running a portable wood fired pizza oven, a wood fired pizza oven trailer, or any kind of mobile wood fired pizza oven setup, you already know that the oven itself is only part of the story. Your support equipment — the plumbing, the workspace, the sink setup — has to be just as road-ready as the oven. And when the season winds down, proper winterization is the difference between firing up confidently next spring and facing a costly repair bill.

Scott Barden recently walked through both of these topics in a detailed video: sink pod assembly features and a complete winterization guide for portable and mobile setups. Here's what you need to know.

What Is a Sink Pod Assembly?

For anyone running a mobile wood fired oven or wood fired pizza oven trailer, a sink pod is your self-contained plumbing and washing station. It keeps your operation compliant with health codes at events, gives you a proper workspace for food prep, and keeps everything organized on the road.

A well-designed sink pod assembly for a portable wood fired outdoor pizza oven setup should include:

Dedicated Fresh and Grey Water Tanks Your sink pod needs separate fresh water supply and grey water collection. This is non-negotiable for commercial wood fired pizza oven operations working permitted events. Tanks should be easily accessible for filling and draining, and sized appropriately for a full day of service without constant attention.

Durable, Road-Ready Construction Everything on a wood oven trailer takes a beating — vibration, road shock, temperature swings. Your sink pod housing should be built from materials that can handle repeated use and the elements without warping, cracking, or corroding. Look for weather-resistant panels, sealed connections, and hardware that won't loosen from road vibration over time.

Easy Access and Intuitive Layout When you're mid-service at a wood fired pizza oven rental gig or a packed event, you don't have time to wrestle with your plumbing. A good sink pod design puts everything within reach — faucet controls, soap dispenser, paper towel holder — without cluttering your workspace.

Secure Mounting and Transport Position The pod needs to lock down securely for transport so nothing shifts, rattles, or gets damaged en route. Whether you're running a traveling wood fired pizza oven across town or hauling a wood oven pizza trailer to an event three hours away, your sink assembly should arrive exactly the way it left.

Pump System A reliable 12V pump system means you don't need to be near a pressurized water source to run your sink. Your fresh water tank feeds the pump, which delivers consistent pressure at the faucet — simple, self-contained, and exactly what you need for a truly portable wood oven setup.

Winterization: Don't Skip This Step

This is the part that separates the operators who have expensive repair stories from the ones who don't.

Water expands when it freezes. Any water left sitting in your lines, pump, tanks, or fittings when temperatures drop below freezing will expand — and it will find the weakest point in your plumbing to crack, split, or damage. For a portable wood burning oven setup with integrated plumbing, that can mean cracked tanks, burst lines, a failed pump, or damaged fittings that are frustrating and expensive to replace.

Winterization takes maybe 30 minutes. It can save you hundreds of dollars in repairs and ensure your outdoor wood fired pizza oven rig is ready to roll the moment spring arrives.

Step-by-Step Winterization for Your Sink Pod

Step 1: Drain Your Fresh Water Tank Completely Don't leave any water in your supply tank. Even a small amount sitting at the bottom can freeze and crack the tank. Tip the tank if needed to get every last bit out.

Step 2: Run the Pump Until the Lines Are Dry After draining the fresh tank, run your pump until it's pulling air — this clears water out of the pump housing and the supply lines. Water sitting inside the pump over winter is a pump replacement waiting to happen.

Step 3: Drain the Grey Water Tank Empty and rinse your grey water collection tank. Leaving standing grey water in a sealed tank over winter is both a freeze risk and a sanitation issue you don't want to deal with in spring.

Step 4: Open All Valves and Drain Ports Leave your drain valves open over the winter. This lets any residual moisture weep out naturally rather than pooling and freezing. If your system has low-point drain ports, use them.

Step 5: Blow Out the Lines For complete peace of mind, use a small compressor or a hand pump to blow compressed air through your water lines from the supply side out. This pushes any remaining water through the system and out the drain. It's the same principle used to winterize home irrigation systems, and it's equally effective here.

Step 6: Disconnect and Store the Pump If your pump is easily removable, bring it inside for winter storage. Pumps are sensitive to freeze damage and store perfectly fine in a garage or shed. Reinstalling in spring takes minutes.

Step 7: Inspect All Fittings and Connections Before you button everything up for the season, do a close inspection of every fitting, hose, and connection point. End of season is the right time to replace anything that looks worn, cracked, or corroded — not the morning of your first spring event

Step 8: Keep in a Safe Location While most of these ovens do not have covers— it is important to keep them in a safe place through the winter to avoid falling objects, plowing etc.
